We are looking for a research engineer to carry out a thesis project. This project is part of a "CIFRE" thesis project between LIMAGRAIN Ingredients and the GEPEA UMR CNRS 6144 laboratory (ONIRIS-Nantes). The candidate will spend approximately 80% of his/her time in Nantes and 20% at LIMAGRAIN Ingredients. LIMAGRAIN Ingredients wishes to develop new texturising functional ingredients in partnership with the GEPEA laboratory (UMR CNRS 6144)
Job description
The aim of this project is to develop cereal ingredients with texturising properties for food applications. The project will be based on an in-depth review of the state of the art. On the basis of this analysis, various process strategies will be considered and implemented on a pilot scale. The application matrices will be of the agri-food type and will be tested on model systems in the laboratory and on real systems in industry. This is a project with strong scientific ambitions (understanding of the physical and biochemical phenomena involved) and applicative ambitions (interest for the industrial sector).
The project is part of the industrial partner's own 'eco-responsible' approach, to which the laboratory subscribes, with a view to developing functional ingredients that are not highly processed, while taking into account the environmental impact of the processes used.
Profile
You are an engineering student or Master student in process engineering, food science, chemical engineering.
You have a keen interest in processes and product-process interactions. You are interested in the mechanistic approach to processes, biochemistry and the physical properties of food products, ....
You have demonstrated an ability to carry out bibliographical research and are recognized for your ability to summarize.
You have an interest in science and scientific approaches. You are rigorous.
As the project covers a wide range of technologies and the work will evolve over the course of the project, your curiosity, taste for versatility, organizational skills, good interpersonal skills and autonomy will be key.
You have a good level of English, as well as good writing (French, English for scientific articles) and reporting skills.

Candidates will be selected in September 2023 (deadline for responding to the offer: Monday 4 September 2023). The project should start in January 2024 for a period of 36 months with a gross annual salary of €35,000 and will be accompanied by social security cover, including a health insurance scheme.
A temporary employment will be proposed between october and December during the period of administrative assessment of the application by the co-financing organisations.
